The importance of super greens today is undeniable. The majority of our diet today is made of processed food.  The green foods help our body to clean, energize and alkalize. Below I am giving a guide on how to cook super greens in 5 different ways.

Ingredients

  • 1 Cup English peas
  • 1 Bunch asparagus spears
  • 1 Cup shelled edamame
  • 2 Garlic Cloves
  • 1/2 Cup mint leaves
  • 1 Cup fresh basil leaves
  • 1/4 Fresh tarragon leaves
  • 1/4 Cup toasted almonds
  • 1 Teaspoon lemon zest
  • 2 Tablespoons lemon juice
  • 1/2 Cup olive oil
  • Salt
  • Shaved Manchego cheese

Method

  1. Place a large pot of salted boiling water into heat.
  2. Shave the stalks of asparagus with a vegetable peeler into 2-inch pieces. Add edamame, asparagus and English peas to the boiling water for 4 minutes. Remove from heat and drain well.
  3. In a blender, process toasted almonds, lemon zest, garlic and all the herbs for a couple of minutes, until smooth.
  4.  In a serving bowl, place the boiled vegetable mixture, the dressing, lemon juice and some salt.
  5. Toss well and top with manchego cheese.

Ingredients

  • 3 Cups spinach
  • 1 Cup chopped pineapple
  • 2 Bananas
  • 1/2 Cup almond milk
  • 1/2 Cup water
  • 3 Tablespoons chia seeds
  • Ice

Method

  1. Place all the ingredients in a blender and mix until smooth.
  2. Serve on a glass and add some ice if you want.
  3. Enjoy!

Ingredients

  • 1 Bag of spinach
  • 1 Head of broccoli
  • 1 Can of cannellini beans
  • 2 Lemons
  • 4 Garlic Cloves
  • 2 Teaspoons of cumin
  • 500 ml water
  • Salt
  • Pepper

Method

  1. Add a saucepan of boiling water into the heat and add the chopped broccoli. Cook for a couple of minutes, until is tender.
  2. Meanwhile, in a frying pan add the crushed garlic, cumin, salt, pepper, olive oil and the spinach. Leave for 2 minutes, stir well and turn off the heat.
  3. Into a blender, add broccoli, the spinach mixture, and the washed/drained cannellini beans. Add water and lemon juice as well and blend until smooth.
  4. Heat again for 1-2 minutes and serve with coriander leaves on top.
  5. Enjoy.

 

Green Vegetable Stir- Fry

Ingredients

  • 2-3 Broccoli heads
  • 3 Spring onions
  • 1/2 Cup Peas
  • 200 gr sugar snap peas
  • 1 Bok choi, cleaned and cut into wedges,
  • 1 Garlic clove
  • 1 Red Chili
  • 2 Tbsp peanut oil
  • Juice of 1 lime
  • 1 Tbsp soy sauce
  • 2 Tbsp Thai fish sauce
  • 1/4 Cup coriander

Method

  1. Place a large wok over high heat. Add the peanut oil, red chili, ginger, and garlic and fry for 30 seconds. Add peas, sugar snap peas and stir-fry for 2 minutes until tender. Remove from heat and set aside.
  2. Add chopped broccoli, spring onions, and bok choi. Stir-fry for 4 minutes or less until they become brown.
  3. Take the sugar peas and peas and toss in the mixture, stirring well. Add soy sauce, Thai fish sauce, and lime juice. Fry for 1 minute and serve on the plate.
  4. Season with ground pepper and coriander leaves.

 

Supergreen Omelet

Ingredients

  • 4 Large free-range eggs
  • 1 Large avocado
  • 50 gr spinach
  • 4-5 Cherry tomatoes
  • 100 gr crumbled goats cheese
  • 75 ml milk
  • 50 gr pine nuts
  • 1 Tablespoon sunflower oil
  • A handful of chives
  • A handful of parsley
  • Salt
  • Pepper

Method

  1. Place the milk, spinach, chives, and parsley into a blender and mix until smooth.
  2. Add the eggs and season with salt and pepper. Blitz again.
  3. Meanwhile, put a frying pan with oil in high heat and pour the mixture. Cook for 2 minutes and then add avocado, goats cheese, pine nuts, and tomatoes. Fold in half and cook for another 3 minutes.
  4. Serve the omelet hot.
