Clementine Cocktail

Ingredients

  • 15 Clementines, squeezed
  • 80 ml Campari
  • 1 1/2 Prosecco
  • 70 gr Caster sugar

Method

  1. Put a deep pan into medium heat and pour the clementine juice with caster sugar and leave for about 10 minutes until the sugar has dissolved and the mixture has been reduced in a third. Turn off the heat and set aside to cool.
  2. Into 8 champagne glasses, pour 1 tablespoon from the clementine syrup, top with prosecco and then add 2 teaspoons of Campari.
  3. Enjoy!

Ingredients

  • 6 Hard-cooked eggs
  • 1 Tablespoon chopped onion
  • 1 Tablespoon mayonnaise
  • 1 Teaspoon mustard
  • 1 Teaspoon sugar
  • 1 Teaspoon vinegar
  • Paprika
  • Salt

Method

  1. Remove the egg yolk from the white and mash into a bowl. Add mayonnaise, onion, mustard, sugar, vinegar, salt and mix well. Add to the egg whites and sprinkle with paprika. For best results, leave for a couple of minutes in the fridge. Enjoy!

  • 1 Package brie
  • 1 Package pie crust
  • Blackberries
  • Blackberries jam

Method

  1. Preheat oven to 200 C.
  2. Meanwhile, spray a mini muffin tin with butter and put the crust into each tin. Press with fingers.
  3. Add brie on each tin and let to bake for around 10 minutes.
  4. Remove from heat and after they have cooled completely add the blackberry jam and top with a blackberry each.

Chessy Oven Potatoes

Ingredients

  • 1 kg peeled and thinly sliced potatoes
  • 1 Package of heavy cream
  • 3 Cups of shredded mozzarella cheese
  • A couple of bacon slices, sliced into strips
  • Salt
  • Ground black pepper
  • Chilli flakes ( Optional)

Method

  1. Preheat oven to 200 C.
  2. Put a saucepan into medium heat and pour in the heavy cream, mozzarella cheese, shredded bacon slices and sprinkle with some salt and pepper. Toss well for 1-2 minutes until bubbly and remove from heat.
  3. Meanwhile in a deep baking dish, lay the thinly sliced potatoes, sprinkle with salt and pepper and spoon the prepared cheesy sauce. Repeat twice. Sprinkle on top with the remaining cheese and bake for around 1 hour or until it becomes gold. In case it is brown, cover with an aluminum foil.
  4. This amazing side dish is ready to enjoy with meat, fish or chicken.

Amazing Roasted Lamb Leg

Roasted Lamb Leg

Ingredients

  • 2 kg boned or de-boned lamb leg
  • 1/3 Cup olive oil
  • 15 Garlic Cloves
  • 1 Tsp ground black pepper
  • 1 Tsp paprika
  • 2  Tbsp mixed herbs
  • 1/2 bunch rosemary leaves
  • Salt
  • 1/2 Cup red wine

Method

In my experience, the secret of a perfect roasted lamb is the marinade process and the slow cook for about 4-5 hours. I and my husband always do it 24 hours in advance ( We always do it in teamwork, lol).

The marinade:

In a small bowl, add olive oil, ground black pepper, paprika, mixed herbs,5 chopped garlic, rosemary leaves and blend well. In an oven dish, arrange the lamb leg and make some dip cutting with a sharp knife. Put all the garlic cloves all over, sprinkle with some olive oil and rub well with all the herbs that we prepared before. Cover with a cling film and leave in refrigerator for 24 hours.

Meat Roast:

  1. After the 24-hour marinade process, preheat the oven to 250 C.
  2. Remove from refrigerator lamb leg let in the room temperature for 5 minutes.
  3. Now put in the oven, covered with an aluminum foil and reduce the heat to 150-180 C.
  4. Check after 1 hour, if the juice has run out and add the cup of wine and 1/2 cup of water. Cover again and let to roast for a couple of hours.
  5. Check every one hour, if the meat has reached the lamb temperature in a meat thermometer and top with its juice time after time. When the temperature is shown according to the instructions and the juice is reduced, remove from heat. But this dish is ready in a minimum of 3 hours in my experience so don’t worry.
  6. Once it is ready, serve on a big plate and cut into thin slices. Cover with its juice if you want.

Vina’s Recipe for “Milk and Butter” Pie

Cheese Pie

This is super easy and cheap recipe that is very famous from the country I was born. I do it in my way, with a couple of small tricks for making it perfect.

Ingredients

  • 1 Package pastries
  • 3 Eggs
  • 1 1/2 Cup milk
  • 3 Tbsp of Melting butter
  • Butter for brushing
  • Salt

Method

  1. Preheat oven to 200 C.
  2. In a large bowl, beat the eggs well and add the milk, half of the butter, and some salt. Mix well and set aside.
  3. In an oven dish, brush with butter the bottom and lay one of the pastries. Sprinkle with the mixture of milk, butter and add the next pastry. Continue in this way till the pastries almost reach the level of the dish.
  4. Bake for around 30- 45 until the pastries become gold on the top.

Ingredients

For the cupcakes:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3 Eggs
  • 1 1/2 Tsp Baking soda
  • 1 1/2 Tsp Baking powder
  • 3/4 Unsalted butter
  • 1/2 Tsp salt
  • 1 Cup milk
  • 3/4 Cup butter
  • 1 Tsp vanilla

For the frosting:

  • 600 gr icing sugar
  • 250 gr softened butter
  • 2 Tbsp milk
  • 1 Tsp vanilla
  • Green gel food coloring
  • Lind Chocolate Bunnies
  • Haribo sticks or other jelly sticks
  • Jelly Beans
  • Other decorative elements like flowers , etc

Method

  1. Preheat oven to 200 C.
  2. Meanwhile, prepare the cupcake pans with the baking cups.
  3. In a large bowl, add the flour, baking powder, baking soda and some salt. Let aside.
  4. Using a mixer, whisk the butter and the sugar. Then add eggs and vanilla. Now mix with the flour mixture.
  5. Bake for 15 minutes.
  6. Remove from heat and let to cool for a couple of minutes until you prepare the frosting.
  7. In a large bowl, beat well butter and vanilla. Continue to add sugar time after time, milk and green gel coloring until it is fluffy. The frosting is now ready to put on the cupcakes.
  8. Sprinkle with some sugar and add the Lind chocolate bunnies or whatever you want.
